Simple Mediterranean Wholefood Bowl Recipe

Meditteranian Wholefood Bowl


It’s been a while, but we’re back on the recipe hype here at Health Room.

This week we’re keeping it simple with a bowl of rice and veggies, made interesting by the addition of two jarred friends: the artichoke and sun-dried tomato.

The dish is inspired by a combination of two different meals we tried recently.

The first is a superfood bowl we chowed down on at a local veggie/vegan restaurant called Milgi’s. (If for some reason you ever find yourself in the South Wales area of the UK, be sure to check it out).

The second is the tasty vegan pizza from Pizza express (the one topped with artichokes and a shed load of rocket).

We mashed those two sons of guns together, and came out with the following Mediterranean wholefood bowl.


Ingredients

Serves 2

  • A few cups of brown rice (or your grain of choice)
  • A tin of chickpeas (or your choice of legume)
  • A handful of artichokes (we picked up a jar for £1 in Aldi, for those of you in the UK)
  • A handful of sun-dried tomatoes (these and the artichokes might be really oily, so you might wanna rinse and drain them)
  • Mediterranean vegetables (one each: aubergine, courgette, pepper – either fresh or frozen)
  • A few handfuls of spinach (or your green of choice)

 Directions

  1. Stick your brown rice or grain of choice on to cook, following the instructions on the packet.
  2. In the mean time, chop up your aubergine, courgette and pepper. I like to cut them into big slices.
  3. Add them into your frying pan, and fry gently in a little water for 10-15 minutes.
  4. When your veggies are softened, add in your chickpeas, spinach, artichokes and sun-dried tomatoes. Stir for a few minutes, then serve up over your rice. Simple, yet satisfying.
